Vacuum chamber machines are machines that seal food in a plastic bag for preservation. They have strong vacuuming power to remove the air from food in the plastic bag and are often used in commercial kitchens, although there are bench top models which are used in homes. They can be single of double chamber machines, most commercial machines have double chambers.

The food preservation process is fairly simple and achieves excellent food preservation rates to minimise waste and spoilage. The food is placed in the special plastic bags and the entire bag is put inside the chamber with the open end placed under the sealer. The machine extracts all the air from the bag and the bag is then sealed with heat. Extreme heat is used to seal these bags so ordinary plastic bags cannot be used with vacuum chamber machines.

In the home setting, a vacuum chamber machine is a good investment as it helps to minimise food and money wastage and also preserves the quality of the food. When food is frozen with air trapped inside the bag, this can lead to the product deteriorating and discolouring over time. When the air is removed, there is no oxygen present for bacteria to thrive. The original freshness and colour is retained in the frozen food resulting in a much tastier and healthier product.
